Ruby’s Roasted Tomatoes

In this weeks organic veg box, there were some lovely vine tomatoes. Problem is that I like them, but there is only so much salad you can eat, so I wanted to transform them into something a bit special. I enlisted my special helper and we set to work!

We set the oven to 200 and got to work chopping all the tomatoes in half and spreading them on a foil lined baking tray. (I recently bought a Circulon one which is pretty damn cool!)

Then we glugged some olive oil over them, sprinkled with salt, pepper, dried rosemary and oregano.

Once, prepared we popped them in the oven.

40 mins later, et voila. Intense, chewy, herby tomates which ended up stuffed on top of home made burgers!
